To celebrate Easter this year, I decided to create three different fillings to stuff our home-made eggs. One filling was coconut with apple, another was vegan dulce de leche made from millet and coconut sugar, and the third, to boost the protein content, was made with Greek yogurt, strawberry, and vanilla protein. All three turned out incredibly delicious and added a fun Easter twist; we mixed them together and savored them one by one, enjoying the surprise of each bite.
This Easter, I felt nostalgic for the eggs my mother used to hide around the house on Easter morning for me to discover. Easter reminds me of so many things; I had an Easter bunny named Dimitri who communicated with me through letters – of course, it was my mother behind it all. Every Easter, he would leave me a hidden letter, and I would respond… I remember one year when this went on for weeks, me sending letters to him and him sending them back to me.
I also remember very well the day I caught my mother making Easter eggs in the kitchen at home with a mixing bowl, and she told me she was so worried that the bunny wouldn’t come this year that she decided to make them herself, just in case. She always made a big effort to bring the magic of Easter into our home… there were carrots left in the cat’s food bowl before going to bed, flour-made bunny footprints scattered throughout the house in the morning, and the eggs were always wrapped in colorful cellophane.
This time, Easter was far from home (okay, Easter hasn’t been that magical for a while now), and the eggs were made of dark chocolate and carefully chosen ingredients. I had a lot of fun making the fillings, filming and photographing the recipes and eating the eggs with my friends… I hope you guys enjoy the recipes!
Easter-infused Strawberry Protein & Greek Yogurt Filling
This filling is ridiculously easy to make, it’s delicious, nutritious, and even boosts your proteins while you indulge in a stuffed Easter egg.

Ingredients
- 1 cup Greek yogurt
- 1 scoop Vanilla protein powder
- 1 cup Chopped strawberries
- 70% chocolate for the chocolate shells
Instructions
- Begin by mixing the whey protein with the yogurt, then add the strawberries and let it chill.
- While that's chilling, melt the chocolate in the microwave (you can temper the chocolate if desired) and pour it into the molds, spreading it evenly to create a thin chocolate layer.
- Chill until the chocolate sets.
- Fill the molds with the strawberry mixture, cover with more chocolate, and tap the mold against the table to ensure even spreading.
- Chill again until set, then unmold and enjoy.
Healthy Easter Treat: Easy and Nutritious Coconut Filling Recipe with a Twist of Maple Syrup
If you’re looking to make your Easter healthier and tastier, you need to try this super easy and nutritious coconut filling. It contains little sugar as apples help sweeten it without the need for additional sweeteners. If you don’t consume sugar or have a baby at home and want to make this treat, simply add the amount of apple and omit the maple syrup.
Apple: Apples are a popular and nutritious fruit known for their sweet and tart flavor. They are high in fiber, vitamins (such as vitamin C), and minerals, making them a healthy addition to a balanced diet.

Ingredients
- 4 medium Apples peeled and diced
- 400 ml Coconut milk
- 2 tbsp Maple syrup
- 1 cup Shredded coconut
- 70% dark chocolate
Instructions
- In a saucepan, combine the diced apples, coconut milk, shredded coconut, and maple syrup.
- Cook over medium heat, stirring occasionally, until the apple pieces dissolve and the mixture starts to thicken and pull away from the sides of the pan. This should take about 10-15 minutes.
- Remove from heat and let the coconut filling cool completely.
- Meanwhile, melt the dark chocolate in a microwave. Pour the melted chocolate into Easter egg molds, making sure to coat the sides evenly. Refrigerate until the chocolate hardens.
- Once the chocolate shells are set, spoon the cooled coconut filling into each mold, spreading it evenly. Return the filled molds to the refrigerator and chill until the coconut filling is firm.
- Unmold the Easter eggs carefully and serve.
Nutritious Millet-Based Dulce de Leche Easter Filling: A Protein-Packed Twist on a Classic Treat!

Millet: Millet is a small, gluten-free grain that is rich in nutrients such as magnesium, phosphorus, and fiber. It has a mild, nutty flavor and a slightly chewy texture, making it a versatile ingredient in both sweet and savory dishes.
Coconut Sugar: Coconut sugar is a natural sweetener made from the sap of coconut palm trees. It has a lower glycemic index compared to regular sugar, which means it has a slower impact on blood sugar levels. It has a caramel-like flavor that adds sweetness to recipes without being overly sugary.
Almond Butter: Almond butter adds a nutty and creamy texture to recipes and can be used as a spread, dip, or ingredient in baked goods and desserts.It is a rich source of healthy fats, protein, and essential nutrients such as vitamin E, magnesium, and calcium.
In Brazil, dulce de leche is popular treat, but it’s typically loaded with sugar, making it a challenge to find a healthier alternative. Growing up with dulce de leche, discovering a healthier option is a welcome relief for satisfying those nostalgic cravings and this vegan dulce de leche version is the best! This cream works wonderfully with chocolate in our Easter eggs, but it’s also versatile enough to enjoy with toast and banana, pancakes, cakes, and a many other options.
Nutritious Millet-Based Dulce de Leche Easter Filling
Ingredients
- 1/2 cup millet
- 1 1/2 cup water
- 3/4 cup coconut sugar
- 1/2 cup almond butter
- 1/4 cup hot water
- dark chocolate (70% or higher)
Instructions
- Rinse the millet thoroughly under cold water.
- In a saucepan, combine the rinsed millet and water. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the millet is tender and water is absorbed.
- Transfer 1 1/2 cups of cooked millet to a blender or food processor. Add coconut sugar and almond butter to the blender with the cooked millet. Blend the mixture until smooth and creamy, resembling dulce de leche. You may need to scrape down the sides of the blender occasionally.
- Let the millet-based dulce de leche cool completely.
- Meanwhile, melt the dark chocolate either in a microwave or using a double boiler. Pour the melted chocolate into Easter egg molds, making sure to coat the sides evenly. Refrigerate until the chocolate hardens.
- Once the chocolate shells are set, spoon the cooled millet-based "dulce de leche" into each mold, spreading it evenly. Seal the filled molds with more melted chocolate, covering the dulce de leche completely.
- Return the filled molds to the refrigerator and chill until the filling is firm and the chocolate is set. Unmold the Easter eggs carefully and serve.
